Cultivating the olives

The rebirth of the L’Ostal Cazes
olive grove

Planted in the 60s, after the severe frosts of 1956, the grove is now close to 4,600 trees. In 2003, it was given a major renovation: clearing, uprooting and pruning.
Sheltered by the Montagne Noire, facing south, the L’Ostal Cazes olive grove brings together on its 25 hectares some of the finest olive varieties (including picholine, lucques, ascolana or verdal).

Once a year, between March and May, the crew conducts a drastic pruning; a vital procedure in the cultivation of olive trees aimed to promote fruiting of the olives.
The fruits are then picked by hand from November until January and then crushed. After the first cold press, the blending of the varieties offers a highly aromatic oil with flavours of subtly lemony tomatoes, of thyme, and of rosemary.

The L’Ostal Cazes olive grove is able to produce around 10,000 bottles of olive oil every year.
