Built right up against the slopes of the “Petit Causse”, the terroir of L’Ostal Cazes alternates between compact limestone and sandstone marls. The nature of the soil promotes water infiltration and the establishment of good groundwater.
The roots of the vines grow deep down and can absorb sufficient amounts of water to withstand the summer drought.
Beyond its geology, this terroir, which has been cultivated since antiquity, is just as distinct for its unique climate: very sunny Mediterranean days contrast with the cool breezes from the Montagne Noire and the slopes of the Causse.
The alternation of the effects of hot air and cool air is conducive to the prolonging of the growing cycle and a steady maturation of the grapes.
Stretched along the foothills of the Montagne Noire, this area enjoys a majority of southern exposure, ideal for the blossoming of the vines.
Furthermore, the extremely irregular relief, consisting of hills and valleys, enjoys unique and varied expositions allowing each grape variety to develop its own aroma.
